Chicago’s Diversey Parkway seems to get hipper in each season, with new boutiques, bars and restaurants opening at a rapid pace. Now, a restaurant featuring mostly local food and spirits has moved in. It’s called “2 Sparrows”, and it recently opened its doors in the Lincoln Park/Lakeview neighborhood. Chef and Partner Gregory Ellis uses fresh local ingredients to create things like a giant homemade pop-tart with fois gras and cherry compote, a seasonal veggie quiche, and biscuits and gravy - all ingredients sourced from local farms. Elis and his partner make everything from scratch, including the drinks. A fallen tree from a Washington Park neighborhood serves as the 13-foot bar in the center of the hip eaterie. (see photo) General partner and manager Stephen Fladung says there’s even a bloody mary made with local heirloom tomatoes. I stopped by on a busy Saturday and tried the pork belly sandwich - it melted in my mouth. Delicious. The bartender makes creative cocktails, made with local spirits and often flavored with local produce, and the bar also features dozens of local beers and other locally sourced liquor. It’s packed at breakfast and lunch and overflowing during brunch on weekends - more proof that “going local” is more than just a fad. For more info, go to www.2sparrowschicago.com
